Eggcellent Easter Recipe

Easter is the perfect time of year for family gatherings and gourmet meals with friends. After eating your weight in chocolate eggs, why not try these recipes to impress your guests this Easter.

Homemade Easter Hot Cross Buns

Hot cross buns are an Easter staple, so get into the Easter Spirit by making your own at home.

Dough Mixture:

Step 1: Combine 4 cups of plain flour, ¼ cup of caster sugar, 1 ½ teaspoons of mixed spice, a pinch of salt and 1 ½ cups of currants in a large mixing bowl.

Step 2: Melt 40g of butter in a small saucepan over a medium heat. Add 300ml of milk and heat for 1 minute or until warm. Add warm milk mixture and 2 lightly beaten eggs to the currant mixture, and mix together until it nearly forms a dough. Place mixture on a surface with flour and knead until dough is smooth.

Step 3: Line a large baking tray with non-stick baking paper and divide dough into 12 even portions and shape each into a ball, and place on to tray about 1cm apart. Cover with cling wrap and set aside for 30 minutes.

Step 4: Preheat oven to 170ᵒC while dough rises.

Flour Paste:

Step 5: Mix ½ cup of flour and 4 tablespoons of water together in small bowl until smooth. Spoon into a pipping bag and pipe flour paste onto hot cross buns to form crosses. Bake in oven for 20-25 minutes.

Glaze:

Step 6: Put 1/3 cup of water and 2 tablespoons of sugar into a small saucepan over a low heat and stir until sugar dissolves. Bring water to the boil and boil for 3-4 minutes and brush glaze over warm hot cross buns and serve.

Easter Egg Rocky Road

Step 1: Grease a deep, square pan, and line with baking paper.

Step 2: Melt 300 grams of chocolate eggs in a heatproof, microwave safe bowl for 2 to 3 minutes, stirring every 30 seconds or until smooth.

Step 3:  Place 100 grams of mini marshmallows, 100 grams of pistachios, and 150 grams of dried cranberries. Add chocolate and stir gently to combine ingredients.

Step 4:  Place mixture into pan, and spread evenly. Place whole Easter eggs into top. Refrigerate until set.

Step 5: Remove from pan and cut evenly in 25 pieces and serve.
